Chemical preservatives are often divided into three groups:

  1. Organic and sweet preservatives: benzoate, strepropyl, vanillic ester, glycol, fatty acid propionates, monochloroacetic acid
  2. Mineral preservatives: nitrate and nitrite – sulfites and sulfuric anhydride – double sulfate – phosphates
  3. Conventional preservatives: Sugar, salt, alcohol, fatty smoke and organic acids are considered as common harmless preservatives. These substances have anti-fermentation properties and are able to kill germs and fungi or stop their activity.
